For the past few years I’ve made vegan recipes for all our family dinners. Easter, Christmas, Thanksgiving. Each time I search for something that everyone will like, including my Dad (no small feat).
For your convenience, I’ve compiled my family’s favourite entrees, sides, desserts and breakfast (in case your family does Easter brunch). These recipes are simple and sure to please.
Thank you to all the food blogs featured below. You continue to make family dinners a success!
Entree
Glazed Lentil Walnut Apple Loaf from Oh She Glows.
This is my absolute go to for any holiday. It takes a lot like stuffing (amazing stuffing) so you’re whole family will love it. Oh everything I make, this is one my Dad’s favourites.
Side
Nutty Green Beans from Chatelaine magazine.
Sub olive oil instead of the butter in this recipe and it becomes fully vegan. I make this (with the olive oil) for dinner often it’s always delicious. Plus, it’s super quick to make.
Dessert
Fudge Brownies from Begin with Nutrition.
I make these brownies for everything and everyone! This is by far my favourite vegan dessert. So delicious and moist; no one will even guess the secret ingredient. If you like peanut butter and chocolate, this recipe is for you. Bonus – they’re super quick to make.
Breakfast
Easy Whole Grain Vegan Pancakes from Minimalist Baker
Slightly nerdy fact, in university one of my favourite things to do with friends was have BYOT pancake nights. That’s right, bring your own toppings. Needless to say, I’ve tried literally dozens of pancake recipes and this one is by far the favourite. Fluffy, delicious, easy. Nuff said.
Happy Easter and happy cooking!
I like the look of those nutty green beans! Will need to try this recipe this week 🙂
